Title of Program: Food Equity and Sustainability
E-mail Address: skimbro2@vols.utk.edu
Hometown: Nashville, TN
Year: Junior
Anticipated Graduation Date: Spring 2023
Description of Program: The negative consequences of overabundance and specialization in modern food systems largely outweigh the benefits. Industrialized agriculture displaces soil, laborers, and small farmers to pave the way for short-term profitability and environmental destruction. In my program I examine the politics, ecology, and history of food systems and choices. Ultimately, this is an assessment of how equitable, sustainable food allocation maximizes social welfare. Through historical assessment of dispossession and an exploration of successful urban agriculture in places like Cuba and Nairobi, I plan to evaluate how we can uplift rural and urban economies, save our soil, and fill our bellies.
